Figuring out what foods are triggering some of your flares can be super helpful (obvi), that's why I initially did the AIP (autoimmune protocol) diet. If you're not familiar with it, it's an elimination diet removing all gluten, dairy, corn, soy, nuts/seeds, nightshades and refined sugar. That alone, in the beginning before I got creative, made me want to poke my eyeballs out with a fork. I'm sure you can about imagine how defeated I felt when I was still flaring after removing all of those things. Turns out my body has beef with beef and a couple other things that are compliant on AIP. This my friends, is why I always say AIP is a good starting point but JOURNAL, JOURNAL, JOURNAL. Doing this will help you connect the dots a lot faster.
With that said, every recipe I post on here will be AIP compliant, and yes they are all still very delicious. Check back in often as I will be posting a new recipe, monthly!
INGREDIENTS:
1 1/2 lbs carrots, peeled and cut into 1-inch chunks
1 1/2 tbsp grated ginger
1 tbsp ground turmeric
1 can (14oz) lite coconut milk
2-4 cups vegetable or chicken broth (enough to cover carrots but the amount depends on the consistency you prefer your soup)
1/4 tsp sea salt
1/4 tsp ground clove
1/4 tsp mace
INSTRUCTIONS:
1. Add all of the ingredients, except the coconut milk, to a dutch oven or large pot. Heat on medium high until it begins to boil. Once it is boiling, cover and reduce to a simmer until carrots are soft, about 30 minutes.
2. Remove from heat and let it cool slightly. You can leave it in the pot and use an immersion blender or transfer to a blender and blend until smooth.
3. Once it is blended add the coconut milk and blend again for another 10 seconds or so until it is fully mixed in.
4. Garnish with coconut flakes, micro greens and pomegranates.
NOTES:
If for some reason you don't have the full pound and a half of carrots, adding some chopped up, peeled sweet potatoes can work in this recipe too. This recipe freezes well. I always double (sometimes triple) this recipe to have a good freezer stash on hand.
